The rice cooker hissed at exactly six-forty in the morning, the same way it had every day for the past eleven years, and Han Soo-ah had come to think of the sound as her father's heartbeat. Steady. Reliable. A little tired around the edges but still going.

She knelt on the kitchen floor of Hanmi Jip, sleeves rolled to her elbows, fingers stained faintly orange from the gochugaru she'd been massaging into a mountain of napa cabbage since before dawn. The radio on the shelf above the sink murmured a morning talk show nobody was listening to. Steam curled up from three different pots—soybean paste stew, blanched spinach, a broth that had been simmering since midnight—and fogged the small window that looked out onto the alley, where the neighborhood cats were already prowling for scraps.

This was the part of the day Soo-ah loved best, when the restaurant belonged only to them, before the shutters rolled up and the world came pushing in with its hunger and its complaints and its four-star reviews that somehow always mentioned the "outdated interior." Just her, her father, and the low murmur of Seoul waking up outside.
